As time goes on, this is not necessarily a bad thing. I've got several Chinese knives that hold an edge as well or better than some of the much more expensive domestic models I own. This is especially true with some of the Chinese Ceramic kitchen knives I have. They'll match and even exceed the cutting ability of some of the 3 digit European Ceramics I have. Just as "Made In Japan" lost it's definition of "junk" quality, China is quickly following suit. Especially as heat treatment of their metals greatly improve. Bill T.
